Here’s a fun and easy kid-friendly Easter cookie recipe admin March 25, 2021 About The Author More from this Author One Response Elomack October 8, 2021 Apple, Potato & Chickpea Curry **Ingredients:** – 3 medium onions – 1 chilli pepper – 2 cloves of garlic – 2 large apples – 3 medium potatoes – 200g cooked chickpeas – 150g butter – 500 ml vegetable broth – 400 ml heavy cream – 2 tbsp curry powder – A bunch of mint – Salt to taste **Preparation:** 1. Prepare your veggies: finely dice the onion and chilli. Mince the garlic. Cut the apple and potatoes into cubes, 2 by 2 cm should be ideal. I actually like to peel the potatoes but leave the skin on the apples. 2. Begin by heating the butter in a pot over medium heat. Once it’s melted, add the onion and immediately salt it so it releases some moisture. Sweat for 4 minutes, then add your chilli and garlic. Cook for 2 minutes, then add the curry powder and cook for another 2 minutes. 3. Add the apples and broth. Cover and cook for 10 minutes. 4. Remove half of what’s in the pot, blend it and return to the pot. 5. Add the potatoes, chickpeas, and cream, then cook for 15 minutes or until the potatoes are soft. 6. Let it cool down a bit, then add chopped mint. Add salt and pepper to taste if needed. 7. Serve over some basmati rice with additional lime wedges and some more mint.
