Green onions and spring mix lettuce for garnish (optional)
– In a mixing bowl mix together mayo, sweet chile sauce, sriracha and season to taste with salt.
– In a small saucepan or frying vessel add oil, enough to fill the pot one inch deep. Bring to temperature over medium heat.
– add shrimp to buttermilk and let soak while the oil is heating up 5-10 minutes.
-drain shrimp and add to cornstarch tossing to coat every little bit. Shake off extra cornstarch.
-Put the shrimp in the hot oil and fry for 1-3 minutes or until theyre a light golden brown and cooked through. Dont forget to stir them or they will clump together on you.
-drain the shrimp on a paper towel if you had to cook them in multiple batches.
-in a mixing bowl add 2-3 tablespoons of bang bang sauce and throw in the shrimp. toss them around like a pro until every little bit is covered in sauce.
-serve over spring mix lettuce topped with some green onions like the restaurant, or eat them on tacos, as a poboy, or just snack on em while standing at the kitchen counter.
