We grow a lot of our own fruit, so we are always looking for ways to use it up in the most delicious ways possible. Serves: 2 **INGREDIENTS** **For the Compote** * 300 g Fresh or frozen mixed berries * 1 tbsp Soft brown sugar * 2-3 tbsp of water **For the yogurt parfait** * 150 g Plain yoghurt * 100 g Fresh berries * 50 g Your favorite granola **INSTRUCTIONS** 1. The first step in making your yogurt parfait is to add fresh or frozen mixed berries, water and soft brown sugar into a small sauce pan. 2. Cook over a low heat and simmer for around 30 minutes. 3. Stir occasionally so it doesn’t stick to the bottom of the sauce pan. 4. When it’s finished cooking put to one side to cool (It will thicken a little more as it cools too). 5. Grab yourself a couple of glasses and simply layer yogurt, mixed berry compote and granola, repeat the layers until they almost reach the top of the glass. 6.
