I’ve had a 95% cacao chocolate laying around for a while now and since it was too bitter to eat normally (although delicious in small amounts) I decided to make brownies with it.
# Recipe
* 200g / 14 tbsp unsalted butter
* 200g / 11/4 cups dark chocolate chips
* 175g / 1 cup brown sugar
* 3 eggs
* 1 tsp vanilla extract
* 75g / 1/2 cup plain flour
* 30g / 1/4 cup Dutch processed cocoa powder
* Pinch of salt
* 180g / 6oz (95%) dark chocolate bar, chopped
* 150g / 11/4 cup walnuts
# Instructions
1. Preheat oven to 180°C / 350°F.
2. Lay parchment paper in a 20cm / 8″ square tin.
3. Melt the butter in a heatproof bowl until smooth, using the microwave.
4. Melt the chocolate chips in the now warm and melted butter.
5. Add the brown sugar, vanilla and eggs then mix well.
6. Mix the flour, cacao and salt together then add to the wet mixture. Stir until well incorporated.
7. Add the bitter dark chocolate and walnuts. Mix until both are spread throughout the mixture.
8. Bake in the oven between 20-24 minutes for a gooey center or up to 28 minutes for a fudgy center.
# Notes
* If you don’t like a bitter taste in your brownies then go for an 80-70% chocolate bar.
* The more chocolate you add in the last step before baking the gooeyer your brownies will turn out.
* Rest the brownies for up to an hour before eating.
