In a pot set over medium heat, melt the butter. Add the onion, carrot, celery and some salt to bring out the moisture. Sauté for 5 minutes. 2. Add the garlic and rosemary. Cook for another 2 minutes. 3. Add the potato, cauliflower and mushroom stock. Bring to a boil, then cover and simmer for 30 minutes. 4. Uncover, add the sour cream, black pepper and goat cheese. Blend until as smooth as you want it. Serve. I served it with some more freshly ground black pepper, chilli oil and homemade croutons. Now, when I think about it, the flavor might’ve been a little deeper had I roasted the cauliflower before adding it to the pot. Cauliflower & Goat Cheese Soup
**Ingredients:**
– 100g butter
– 1 large onion, diced
– 1 large carrot, diced
– 2 stalks of celery, diced
– 2 garlic cloves, minced
– 2 stalks fresh rosemary, minced
– 1 large potato, diced
– 1 large cauliflower, around 1 kg, cut into florets
– 700ml mushroom stock
– 200ml sour cream
