* 1 lb pork belly
* 1 shallot, minced
* 4 hard boiled eggs
* 2 tbsp Shaoxing wine
* 2 tbsp soy sauce
* 1 tbsp dark soy sauce
* 1 tbsp sugar
* 1 cinnamon stick
* 2 star anise pods
* 1/2 – 1 cup of water
For meat marinade:
* 2 tsp Shaoxing wine
* 1 tsp dark soy sauce
Instructions:
1. Cut pork belly into strips, and marinade with 2 tsp Shaoxing wine and 1 tsp dark soy sauce. Mince shallots.
2. Heat pan on medium heat and add vegetable oil. Cook shallots until lightly browned. Add pork belly and cook for 5 mins until lightly browned.
3. Add Shaoxing wine, soy sauce, dark soy sauce, sugar, cinnamon stick, and start anise pods. Mix well.
4. Add 1/2 – 1 cup of water depending on your preference. If you like more sauce, then add 1 cup of water. Bring to a boil.
5. When boiling, reduce heat to low. Cover with lid and simmer for 1.5 hours. Check on the pork at 1 hour to see if it’s tender enough for you. If not, wait 0.5 hour longer.
6. Drain oil from the pork fat and add hard boiled eggs to soak up the sauces.
7. Serve with steamed rice and your choice of veggies!
