Prepare the sauce by combining dijon mustard, honey, chilli flakes, garlic, lime juice, salt and pepper. Slowly add the olive oil to emulsify. 2. Dice the tomatoes, salt them and let sit for 20 minutes. A lot of moisture will come out – strain it. 3. Toss the sweet potato with vegetable oil, add salt and bake in 200 C for around 20 minutes or until soft. 4. Thread the shrimp onto skewers. Grill briefly over very high heat – 1 to 2 minutes per side. After they are done, brush with the sauce on both sides. 5. Combine cooked couscous with the potatoes, tomatoes and shrimp. Add parsley, shrimp and the remaining sauce.
