1. Heat olive oil in a pan over medium-high heat. Add eggplant, sauté for 2 minutes. Add the shallots, and some salt, then cook for another 2 minutes.
2. Turn the heat down to medium, add the sweet potato and garlic. Sauté 3 minutes.
3. Add mint, apple cider vinegar, pepper and quinoa. Mix well for around 1 minute.
4. Add the veggie stock, bring to a boil, turn the heat down to low and cook covered for 10 minutes or until all liquid has been absorbed by the quinoa.

**Ingredients:**
– 1 eggplant, diced
– 1 cup shallots, diced
– 1 large sweet potato, diced
– 2 garlic cloves, minced
– 3 tbsp olive oil
– 3 tbsp apple cider vinegar
– A bunch of mint
– A bunch of sage
– 1 cup quinoa
– 2 cups veggie stock
– Salt and pepper to taste
