1. Cut the chicken breast into bite-sized pieces. Add 2 tbsp of light soy sauce and marinade for an hour.
2. Prepare the sauce by mixing the rest of the light soy sauce, dark soy sauce, honey, sesame oil, vinegar, stock, oyster sauce and cornstarch.
3. Make the batter: combine flour, potato starch, salt, and sparkling water. Mix well.
4. Add enough oil to a pot (you will be deep frying the chicken), heat it to 185 C. Coat the chicken in the batter and fry for 6 minutes, in batches. Place on a cooling rack.
5. Heat a bit of vegetable oil in a pan or wok until smoking hot. Add the bell pepper and broccoli, stir fry for 1 minute. Add the cabbage, garlic and ginger. Stir fry for another minute. Add the noodles, chicken and sauce. Toss until coated and glossy. Serve with a bit of chives on top.
Fried Chicken Chow Mein
**Ingredients:**
– 300g chicken breast

– 1/2 cup red bell pepper, roughly chopped
– 1/2 cup broccoli florets
– 1 cup napa cabbage, shredded

– 1 tsp ginger, minced
– 250g chow mein noodles, cooked
– Chives for garnish
