1. Hydrate the yeast in water. Let sit until foamy, around 15 minutes.
2. Mix the flour with salt. Add the yeasty mixture and olive oil. Knead until smooth. Cover and let rise – from a few hours in a warm area to 48 hours in the fridge. The longer the rise, the more complex the flavors developed.
3. Prepare the sauce. Sauté the garlic with some olive oil, add the chilli flakes for just a few seconds, then add the tomatoes, balsamic vinegar, salt, and sugar.
4. Blend the sauce until smooth, then slowly simmer until reduced and thickened.
5. Divide the dough into 4 and shape into balls. Rest for 30 minutes.
6. Take one of the balls and stretch it. Move it onto a pizza peel and start the assembly: spread some of the sauce, add the cheese and any other toppings you might like. I just wanted some simple pepperoni.
7. Place it over a hot pizza stone, in an oven preheated to at least 250C. Cook for 5-6 minutes.
8. As soon as the pizza is out of the oven, I like brushing the edges with a bit of garlic-infused olive oil. Some grated Parmesan cheese on top will make a great addition, as it will quickly melt.
This recipe is pretty much a simple pizza dough and a cooked tomato sauce with a bit of a spicy and tangy twist.
Feel free to use any toppings you like.
