Prepare a sheet pan with aluminum foil and set aside. **Step 2** In a large bowl stir together the quartered plums, honey, brown sugar, lemon juice, cornstarch, salt, and spices. Allow to sit for 20 minutes. Make the egg wash – in a small bowl whisk together a large egg and 1 tablespoon cold water. **Step 3** Pour pie filling into prepared pie shell, and top with lattice. Trim away any excess dough and coat with egg wash and white sugar. Chill pie in freezer for 15 minutes. **Step 4** Place chilled pie on prepared baking sheet. Bake the pie for 60 minutes and then cover loosely with tin foil. Bake pie for an additional 20 minutes. When done, the center of the pie will be bubbling and the internal temperature will read 210 degrees Fahrenheit. Cool pie for a minimum of 2 hours.
