1. Combine water with milk, add your yeast to hydrate. Let sit until slightly foamy.
2. Mix flour with sugar and salt, add the yeasty mixture, egg and 35g of melted butter. Knead until smooth. Cover. Let it rise in room temperature for 1-2 hours or until doubled in size.
3. Shape the dough into buns, place them over a greased baking sheet, cover and let rise again for 30-40 minutes.
4. Bake the buns in 190 C for 15-20 minutes, until golden brown. As soon as they come out of the oven, brush them with more melted butter.
5. Wrap the sausages in bacon, fry until the bacon is crispy.
6. Slice the buns, spread some mayo (I used a mayo with chipotle), put in the sausages, add some bbq sauce, top with raw red onion, diced tomato, fried onion. Finish with some hot sauce
Sauces and toppings are a very personal matter when it comes to hot dogs, feel free to use anything you like in yours 🙂

– Bacon
– Diced raw red onion
– Diced tomato
– Fried onion
– Mayo
– BBQ sauce
– Hot sauce
