Strawberry Ice Cream

  • 250 g Strawberries washed, hulled and halved
  • 2 x 227 g Clotted cream tubs
  • 125 g Castor sugar fine
  • 250 ml Milk full-fat
  • 2 Eggs large
  • Big by whisking the eggs in a large bowl until they’re frothy and light. Slowly add the sugar and continue to whisk for 2-3 minutes or until well combined.

  • Add the milk and clotted cream to this mixture and whisk again.

  • Transfer this mixture to a freezer-proof container. Freeze it for 3-4 hours. Whisk again until smooth before freezing again for another 3 hours. Repeat this process 3-4 times, then freeze until semi-solid or for 2 hours.

  • Add the strawberries to a food processor and blend until semi-smooth with some larger pieces for texture. When the ice cream has started to freeze but is still soft, fold in the strawberries to give a rippled effect. Transfer to the freeze-proof container and freeze until solid.

  • At the time of serving, remove it from the freezer and keep it aside for 5-10 minutes to soften it a little. Garnish it with a few mint sprigs or strawberry slices.

Vanilla Fudge

  • 2-3 drops Vanilla extract
  • 100 g Golden syrup
  • 275 g Golden caster sugar
  • 227 g Clotted cream tub
  • Put the syrup, sugar and cream in a large pan over low heat. Gently stir to dissolve the sugar.

  • Stir constantly, increase the heat to medium and let the mixture come to a boil. Continue to boil the mixture for 10-15 minutes until it reaches 118°C on the sugar thermometer.

  • If you don’t have a thermometer, simply drop a few drops of the mixture into a glass of ice-cold water. It’s done if it rolls into a small ball. However, if it just dissolves, continue to boil it on medium heat.

  • Remove the pan from the heat before adding vanilla extract. Beat using a wooden spoon until thick and begins crystallising around the edges (it generally takes 10 minutes).

  • Pour this fudge in the prepared tin and keep aside to set.

  • Core into squares when warm and serve immediately or store in a cake tin for up to seven days.

  • If you’re gifting it, tie up each piece in small cellophane bags and tie up the ends using colourful ribbons.
