Feeling too lazy to get out of bed on a Monday morning? Well, well! We understand. Mondays mark the start of a new week after long and lazy weekends. And it is okay to not be super happy on a Monday morning. But that does not mean that you have to let Monday blues get the better of you.

In all honesty, weekends and weekdays feel all the same since almost everybody apart from emergency responders are working from home in the wake of the coronavirus pandemic. Before Covid-19, it was still easy to deal with the blues since office colleagues could cheer you up but that isn’t even possible at the moment.

However, you must act as per the changing work culture and adjust your lifestyle accordingly. Be proactive and work out, and also maintain a healthy diet. An easy fruit salad recipe has the perfect balance of flavours. This not only provides for a delicious way to enjoy fruits on a hot summer day, but also it makes a great dish to bring along to a barbeque or picnic.

In a small bowl, whisk together honey, orange juice, and lemon zest. Add fruits, including strawberries, blueberries, raspberries, kiwis, oranges, apples, mangoes and grapes to a large bowl. Pour over the dressing and toss gently to combine the flavours. Refrigerate and serve chilled.


Chickpeas are rich in protein and fibre, both of which aid weight loss, satiates hunger and takes good care of your digestive system. This tasty and vegan mixture of chickpeas, lettuce, tomatoes and mayo, spread on crusty whole-grain rolls or pita bread is the best substitute for a McDonald’s burger to kick off your week.

In a mixing bowl, add chickpeas and mash with a potato masher until you get a chunky texture. Add red onions, red pepper, vegan mayo, mustard sauce, garlic powder, onion powder, salt, pepper, and dill leaves, and stir until combined well. You can also store the chickpea salad in the refrigerator for up to five days. To assemble the sandwich, spread the mixture onto the bread and top with leafy greens of choice. Wrap in parchment paper and enjoy hot on a Monday afternoon!


The crisp exterior with a hearty and flavourful mushroom filling you won’t be able to stop at just one. They taste so good when served warm with mustard sauce or guacamole, a Mexican avocado-based salsa dip.

To make mushroom croquettes, start by frying onion and garlic with the mushrooms. You can also add in any herbs as per your choice. After a few minutes, season with salt and pepper and set aside. In a small pot, make the white sauce. It is not as tricky. You just need to whisk the butter and flour on low flame while slowly adding in the milk and you’ll get a smooth, lump-free sauce. Fold the mushrooms into the white sauce and refrigerate the mixture for a few hours or overnight.

Once chilled, you can roll the filling into the correct shape. Spanish croquetas are usually in a log shape but you can also roll them into a ball. Each croquette is rolled in breadcrumbs, then milk and a second coating of breadcrumbs, and dropped into a pot of hot oil. They are done when they’re golden brown on all sides, and nice and crispy. These croquettes are the best when served right away while crispy.

Rinse and peel two small to medium mangoes and chop them into small cubes. Keep aside half a cup of chopped mangoes for later use. Blend the rest of the chopped mangoes in a mixer jar, along with one cup of fresh Greek yoghurt. Also, add three tablespoons of honey. You can even use any other sweetener like unrefined sugar, jaggery, palm jaggery, maple syrup or coconut sugar. You can skip if you are diet-conscious. Sprinkle half tablespoon cinnamon powder, cardamom powder or vanilla extract. Blend to a smooth consistency and refrigerate. Serve chilled mango smoothie in a tall glass.


This is a popular and healthy ice cream recipe made without cooking cream, sugar, and most importantly, without any ice cream machine. Hence, it is known to be a guilt-free ice cream dessert and can be served at any occasion.

Firstly, peel the skin and slice three bananas and freeze for nearly three hours or more. Now, transfer the frozen bananas into a grinder or food processor and blend into a thick paste without adding any water or milk. Then, add one tablespoon of vanilla extract and three tablespoons of honey. Blend all of them, once again, until it turns silky smooth. Transfer the mixture into an airtight container and refrigerate for a few hours. Do not forget to garnish the banana ice cream with chocolate sauce and nuts.

In case, you want to enjoy a chocolate flavoured banana ice cream, then you can add cocoa powder or chocolate pieces while blending.
