Everyone in my family has a sweet tooth. Since I enjoy baking more than I enjoy cooking, they’re always bugging me to bake something. Lucky for me, my friend Craig is an award-winning cook from our hometown, not to mention a teacher and dad – he does it all! 


All of his recipes are fantastic, including this zucchini bread recipe. With only a few steps, it’s sure to become a favorite with your “sweet tooths!”

Total Time: 1 hour and 10 minutes

Servings: Makes 2 loaves


Ingredients

Here’s how to make it: 

  1. In a large bowl, combine flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, nuts and raisins.
  2. In another bowl, stir and beat eggs and oil together.
  3. Add egg/oil mixture over top of the other ingredients, stirring until moistened. Pour mixture into two 9×5-inch loaf pans.
  4. Bake in a preheated 350-degree F oven for about 1 hour.
