Sticky toffee pudding and my chocolate brownie are the two bestsellers on my pub dessert list and I wanted to elevate it a bit here. I like pears in puddings because they take on the flavour rather than giving it, and make the sponge nice and moist. The apricots are the key to making this pudding extra-sticky.

Ingredients
150g dates, stones removed
100g whole dried apricots, plus 50g extra, chopped
1 tsp bicarbonate of soda
75g unsalted butter, softened
150g dark soft brown sugar
2 tbsp golden syrup
2 eggs
200g plain flour
1 tsp baking powder
1 tsp ground cinnamon
¼ tsp ground nutmeg
1 tsp ground ginger
2 large pears, peeled, cored and sliced lengthways
1 quantity of toffee sauce
