This handy little dough recipe is a great one to master because it’s quick, easy and really versatile.

Pistachio paste is a luxury item, with a jar coming in at about £7, but if you’re feeling fancy it’s really worth the push — these buns are glorious, indulgent and come in a gorgeous (very SS21) shade of pastel green.

If you can’t source the paste you could just as easily leave it out — butter and cinnamon will do you very well for the filling, and it can be left out of the topping too. To that end, these buns are really adaptable, so fill them as you like. Any spices work well, as does sweet shredded coconut, turmeric, nuts, dried fruit and lots more.
