Many Brits have taken to their kitchens to become amateur bakers in lockdown.

Banana bread is so last year, and it’s about time it moved aside for a new tasty treat.

With fears of a third Covid-19 wave on the way, people may feel nervous about unnecessary trips to the shops to pick up a long list of ingredients.

So, we bring you these delicious cookies that only require three ingredients, which you’ll likely already have in your kitchen cupboard.

How to make three-ingredient cookies

  • 200g peanut butter (both crunchy and smooth work fine)
  • 175g caster sugar (other sugars will work too)
  • 1 egg
  • Chocolate chips (optional)

  1. Heat your oven to 180C and line a baking tray with greaseproof paper.
  2. Mix the peanut butter and sugar together in a bowl until well combined. Add the egg and mix to form a dough.
  3. Roll them into 1 inch balls and place them a few inches apart on the sheet.
  4. Flatten them with a fork in a criss cross pattern.
  5. Cook them for 10-12 minutes until they are golden around the edges and then let them cool.

You can keep them in an airtight container for three days, or freeze the dough before baking it and cook them from frozen (by adding two more minutes to the cooking time), whenever you need a quick treat.

If peanut butter cookies aren’t your thing, try some easy cakes, scones, pancakes or meringues with storecupboard ingredients.
