Spring is all about colour and this dessert is sure to brighten up any dinner table.

Shaped like an Easter egg, the recipe involves just a few ingredients.

And while the pastry and filling might not be the healthiest, it does involve lots of delicious fresh fruit.

The idea comes from Andrea Sorandis, AKA The Petite Cook, who has previously created popular recipes like a magic chocolate cake and three-ingredient savoury cookies.

To make this seasonal treat, Andrea recommends whipping up some simple shortcrust pastry, or buying some if you are short on time.

To create the perfect shape, she has provided a template to cut around.

Once you’ve baked the pastry, you can then spread on the filling made from whipped mascarpone, icing sugar and orange zest.

You then just spread it over the base and use chopped fruit to create a beautiful Easter egg pattern.

Andrea recommends serving it within two hours to stop it going soggy but you can make everything up in advance to save some time.

She adds that it’s good to make with kids as they can get involved in the decorating.

‘My toddler absolutely adores this dessert, and all the decorating keeps him well entertained for a good chunk of time, and then, as an added bonus, he gets to eat it too,’ she wrote in her blog about the recipe.

If you want to mix it up a little, Andrea suggests topping it with chocolate chips, chopped roasted hazelnuts or pecan nuts, mini marshmallows, crumbled cookies or mini pretzel.

She also suggests trying chocolate spread or buttercream frosting instead of the mascarpone mixture.
