New Recipe: I Made Trader Joe’s Meyer Lemon Cake Mix, and It Tastes Like a Citrusy Cloud Covered in Icing

If clouds were made of lemons, they still wouldn’t taste as sweet, fluffy, and delicious as the Meyer Lemon Cake Mix from Trader Joe’s. The cake has the perfect texture (spongey and soft), a light lemon taste, and is topped off with an addictive icing drizzle. Hard to believe it came from a box, right? After trying it, I was gushing to my husband about it, and he was skeptical – “Yeah, yeah, lemon cakes are fine!” – but once he took a bite, he could not stop eating it. We had to leave the room for risk of devouring the entire loaf. And at just $3 a box, you’re definitely going to want to stock up for all future dessert, brunch, and snack needs.

It takes about five minutes to make the cake batter, followed by 50 minutes in the oven, at least 45 minutes of cooling, and another five minutes to mix and drizzle the icing on top. So although it’s not the quickest cake mix to make, a majority of the time it’s either baking or cooling, so you don’t have to do anything! You just need one stick of butter (melted), one cup water, and one egg to make the mix, and two tablespoons melted butter and two tablespoons hot water to make the icing.

The cake has just enough lemon flavor without being so overpowering that your face is half-puckered while you’re eating. It’s pure heaven with every bite that melts in your mouth. It’s soft yet doesn’t fall apart like a crumble cake, and it’s sweet but not overwhelmingly so.

I give this cake mix five stars for how easy it is to make and how amazing it is to eat. You can serve this with tea or coffee, and top it with fruit or ice cream. However, it tastes perfect on its own – I would even serve it as a birthday cake. You definitely need to try it and save a couple boxes in your pantry for a rainy day.
