New Recipe: Simple fruit turnover recipe that’s easier than Paul Hollywood’s on Bake Off

The contestants on week two of Celebrity Bake Off 2022 were tested on their pastry skills when they were tasked to make fruit turnovers in the signature round. Ruby Wax, Gareth Malone, Laura Whitmore and Yung Filly gave it their best shot at making rough puff pastry to impress Paul and Prue in the charity spin-off on the hit Channel 4 show.

Usually found in the bakery aisle at your local supermarket, the scrumptious treat is often filled with a sweet and sticky filling such as apple puree. Paul Hollywood’s fruit turnover recipe calls for tinned apricot halves and almond essence, and it sounds divine.

However, Instagram baker @cakeontherun has shared her twist on the classic pastry by using a healthy alternative. The game-changing kitchen hack requires no weighing scales, no rolling and no chilling, making it super quick and easy to rustle up.

What’s more, it serves one and contains no butter and little sugar, meaning it’s perfect if you are trying to watch your weight. The pastry is made simply by combining yoghurt and flour and the filling consists of cherries, cranberry sauce and almond essence.

Fruit turnover recipe (makes 1)

Ingredients

Method

  1. Pre-heat your oven to 180 fan/ 350 fahrenheit/ gas mark 6.
  2. Mix flour and yoghurt in a bowl using a spoon to combine. When it starts to clump together, use your hands + form a dough ball.
  3. Knead it in your hands for 30 seconds then flatten it out onto a floured surface to create a square shape.
  4. In a mug, mix together the fruit, sauce and almond and then spread it in the middle of your dough.
  5. Fold the dough diagonally to make a triangle shape, pressing the edges down with a fork to crimp it.
  6. Dab the top with a bit of milk and a sprinkling of sugar, then oven bake for 15-20 minutes until golden on top.

Make it vegan – use dairy free yoghurt and milk.

Make it gluten free – use gluten free plain flour + 1/2 tsp xanthan gum.
