New Recipe: Super healthy banana bread muffin recipe that is ready in just 15 minutes

If you’re looking for something easy to bake which won’t bloat your waistline, banana bread may just be the perfect snack for you.

The Great British Bake Off has also been back on our screens in recent weeks, with many people being inspired to create their own doughy delight.

Luckily Instagram baker @cakeontherun has created a special banana bread breakfast muffin recipe which is quick and easy to make.

It’s perfect if you haven’t got much time – it takes just 15 minutes to cook – and you only need four basic ingredients.

The scrumptious muffins are great for breakfast, you can nibble on them for lunch or as an afternoon snack.

They do not contain an ounce of butter or oil and can be made without sugar as maple syrup and sweetener work perfectly well instead.

They are extra delicious served hot straight out of the oven with some jam spread on top. If you love banana bread, then you need to make banana bread dough balls.

Banana bread breakfast muffin recipe (makes 4)

Ingredients:

  • 100g self-raising flour
  • 50g overripe banana, mashed
  • 1 egg (or see below for vegan option)
  • 1 heaped tbsp maple syrup/ sugar/ or sweetener

Method:

  1. Pre-heat the oven to 180C/ 350F/ gas mark 4.
  2. Put everything in a bowl and mix until combined and creamy.
  3. Pour mixture into muffin/ cupcake cases.
  4. Oven bake for 15 minutes.
  5. Serve warm. Best eaten the day of baking.

Nutrition:

*138 calories per muffin (less if sweetener is used)

*Nut free

*Gluten free if you swap standard flour to for gluten-free flour.

*Vegan egg alternative – stir 100ml soya milk with 1 tbsp lemon juice in a bowl. Leave to curdle for five minutes then add to the mix.

Secret tip:

For best results use over ripe banana, the spottier the skin the better as they will make the bread naturally sweeter and you won’t need to add as much syrup/sugar.
