New Recipe: What to cook: Three soup recipes with pasta, dumplings and tofu

Soups are easy all-in-one meals, made in one pot and maybe even consumed on the couch in front of a new show.

And soup season is here, with the end of daylight saving meaning nights are a little darker and probably cooler too.

Here are three trusty recipes to add to your rotation — whether you like your soup with pasta, cheesy dumplings or silky chunks of tofu.

Pasta e fagioli, which translates to pasta and beans, is a hearty soup you’ll want to return to.(ABC Life: Julia Busuttil Nishimura)

Is it a soup, is it a pasta or is it magically both? This recipe from Julia Busuttil Nishimura was our most popular recipe of 2019 and it’s finally time to enjoy it once more. It’s a silky tomato-based soup and the addition of pasta and tinned borlotti beans means it’s filling too.

Ginger and chilli oil add some heat to this vegetarian version of a classic Cantonese dish.(ABC Everyday: Hetty McKinnon)

Hetty McKinnon makes the classic chicken and sweet corn soup vegetarian in this quick and sunny recipe. Fresh, frozen and tinned corn will all work in this recipe. Plus, you’ll learn the “egg drop” technique, swirling a just-beaten egg into the soup before serving.

Fluffy cheese and spring onion dumplings finish cooking in a pot of smoky tomato soup.(ABC Life: Hetty McKinnon)

This is another Hetty special, using tinned tomatoes as a base. Chilli flakes and paprika adding a little heat and smokiness to this comforting soup, made even cosier with cheesy dumplings that cook in the soup while it bubbles away on the stove. No need for toast!
