Add yellow onion and sauté until softened. Add minced garlic and sauté until fragrant, 30 seconds to a minute. Add tomato paste and cook a few minutes until darkened in color and slightly browned. Add vodka to deglaze and cook until reduced by half. Add 1 cup of heavy cream or half and half. Add red pepper flakes, salt, and pepper to taste. Toss the sauce with the pasta and sprinkle in a few tablespoons of freshly grated cheese. Add pasta water to desired consistency. Enjoy!
