In a large bowl add oil and salt to flour – mix until evenly incorporated. 2. Gradually add ½ cup water. 3. Continue adding water until a stiff dough is formed. 4. Knead dough for 10-12 minutes (it should be firm, yet springy). 5. Cover and rest for ~15 minutes. 6. Add enough oil to a pot to deep fry, bring it to medium-high heat. 7. Meanwhile, roll the dough into a 2″ thick cylinder. 8. Divide the dough into 12 equal portions. 9. Roll each portion into a sphere and gently flatten it with your palms. 10. Rub a small amount of oil onto your working surface – press the Poori down and roll into a 3″ wide circle, aiming for ⅛ of an inch thickness. 11. Once oil is hot, gently place a Poori in and fully submerge it. 12. Once the Poori starts to rise gently press it into the oil, which will cause it to balloon. Flip midway to ensure even browning. 13. Remove it from Oil when it turns golden-brown (If needed, place on a kitchen towel to remove excess oil). 14. Serve hot along with curries, chutney & vegetable stews.
