Start with the sauce. Heat 2 tbsp olive oil in a pan over medium heat. Add the onion and cook for 2 minutes. Add half of your garlic, bell pepper and a pinch of salt. Sauté for 5 minutes. Add the wine, evaporate most of the liquid, then add the crushed tomatoes and sugar. Cook until reduced and thickened. Add the basil, and some salt and pepper to taste. 2. Prepare the dressing by combining thyme, rosemary, parsley, the other half of your garlic, 3 tbsp olive oil, salt and pepper. 3. Transfer the sauce to an oven-safe pan and coat the bottom of it. Arranging the vegetables alternating between the eggplant, tomato, yellow squash and zucchini. Spoon the dressing over. 4. Cover with foil, and bake in 200 C for 1 hour or until the veggies are tender.
