* 1/2 cup sour cream
* 1/4 cup coconut milk
* 1/3 cup crushed pineapple
* 2 tablespoons sugar
**Directions**
1. whisk all the ingredients in a small bowl and refrigerate until you’re ready to eat.

**Parrot Bay Coconut Shrimp**
* 12 large peeled, tail-on, deveined shrimp, butterflied
* 1 cup all purpose flour
* 1/2 cup milk
* 1 tablespoon rum
* 1 tablespoon sugar
* 1/2 cup panko breadcrumbs
* 1/4 cup shredded sweetened coconut
* 1 teaspoon cornstarch
* pinch of salt
**Directions**
1. get 3 separate bowls
2. in bowl 1 put half (1/2 cup) the flour
3. in bowl 2 combine the other 1/2 cup of flour, milk, rum. sugar and salt. whisk to combine.
4. in bowl 3 combine the coconut, panko and cornstarch, mix to combine
5. starting in bowl 1 dredge the shrimp in the flour, then the flour milk mixture, and finishing with the panko mixture. Make sure to shake off any excess between each dredge. Make sure to really push the panko and coconut into each shrimp.
6. preheat an air fryer to 380 degrees and coat your basket with cooking spray.
7. place your shrimp into the basket making sure not to overcrowd it. spray the shrimp with a light coating of oil.
8. cook for 9 minutes.
9. plate the shrimp and dunk em in plenty of pina colada dipping sauce.
