May also substitute pasta or potato gnocchi. 1. Preheat oven to 450F. Combine meatball ingredients. Roll into 2 inch meatballs and place on 9 x 13 oven safe pan covered in parchment. Bake for 15min until crispy. 2. Melt butter in Dutch oven or large deep sided skillet on medium high heat. Add mushrooms and cook until mushrooms release their liquid and it evaporates. 3. Turn heat to medium. Add shallots and garlic, saute until shallots are soft. 4. Add sherry, reduce until thickened. Add flour and cook for 1 minute, stirring constantly. 5. Whisk in chicken broth, drained spinach, and cream. Bring to low simmer. Add meatballs and any accumulated juices, simmer for 10min while sauce thickens. Season with salt and pepper to taste, top with thyme. Prepare gnocchi or pasta according to recipe/ package directions.
