Ros omelette, also known as Ras omelette, is a snack food in Goan cuisine of India. Ros means “gravy” in Konkani. It is a spicy gravy, consisting of onions, curry leaves, black mustard seeds, scraped coconut and spices. Ingredients such as mushrooms or cauliflower are also commonly used. The omelette contains eggs, herbs, finely chopped green chili peppers, onions (or shallots), finely chopped fresh green coriander and salt, with many variations. The ros is cooked separately. The hot ros is poured over the freshly fried omelette and served with Goan bread (Pav).

**Ingredients**
• 1 tablespoon (approx.) Refined Oil
• 1 medium Onion, chopped
• 6 Garlic pieces
• One 1/2 inch Ginger piece
• 1 Green Cardamom
• 3 Cinnamon sticks, 1 inch size each
• 5 Cloves
• 1/2 teaspoon whole Black Pepper
• 1 teaspoon Cumin seed
• 1 teaspoon Coriander
• 6 whole Kashmiri Red Chili
• 1/2 cup desiccated Coconut
• 1 medium size chopped Tomato
• 1/2 teaspoon Salt
• 1/2 teaspoon Turmeric powder
• 1 teaspoon Refined Oil
• 1 tablespoon chopped Onion
• Water as per requirement
• 3 Eggs
• 1/4th teaspoon Salt
• 1/2 teaspoon Kashmiri Red Chili powder
• Little amount of chopped Green Chili
• Chopped Coriander leaves
• 2 tablespoons chopped Onion
• 2 tablespoons (Approx.) Refined Oil
• Lime
**Preparation steps**
1. Add 1 tablespoon (approx.) Refined Oil in pan and heat
2. Add 1 medium Onion, chopped and fry till translucent
3. Add 6 Garlic pieces and one 1/2 inch Ginger piece
4. Add 1 Green Cardamom
5. Add 3 Cinnamon sticks, 1 inch size each
6. Add 5 Cloves
7. Add 1/2 teaspoon whole Black Pepper
8. Add 1 teaspoon Cumin seed
9. Add 1 teaspoon Coriander
10. Add 6 whole Kashmiri Red Chili
11. Add 1/2 cup desiccated Coconut and mix well
12. Add 1 medium size chopped Tomato and stir
13. Spice mixture is ready. Cool down to room temperature
14. Transfer spice mixture to grinder for grinding
15. Add 1/2 teaspoon Salt
16. Add 1/2 teaspoon Turmeric powder and grind
17. Next prepare gravy. Add 1 teaspoon Refined Oil in pan
18. Add 1 tablespoon chopped Onion and fry till translucent
19. Add spice paste and stir
20. Add Water as per requirement and mix well
21. Gravy is ready
22. Next prepare Omelette. Crack 3 Eggs in mixing bowl
23. Add 1/4th teaspoon Salt in Egg
24. Add 1/2 teaspoon Kashmiri Red Chili powder
25. Add little amount of chopped Green Chili
26. Add chopped Coriander leaves
27. Add 2 tablespoons chopped Onion
28. Whip
29. Add 2 tablespoons (Approx.) Refined Oil in pan
30. Add whipped Egg in pan and fry
31. Fold the Omelette
32. Omelette is ready
33. Serve the Omelette with gravy. Garnish with chopped Onion, Tomato, Coriander leaves and Lime
