Instructions
* Bring a pot of salted water to boil over a high flame. Once the water starts bubbling add the spaghetti and cook for 8-12 minutes until al dente. Then, reserve ¼ cup of water, drain the spaghetti, and keep aside.
* Meanwhile, heat a large heavy-bottomed pan over a medium flame. Lay the bacon slices and cook them for 3-4 minutes on each side until crisp. Remove into a dish lined with a paper towel.
* In the same pan, drizzle the olive oil and let it heat for 30-60 seconds at medium-high flame.
* Add the minced garlic and sauté for a few seconds until golden.
* Now, add the collard greens followed by a pinch of salt, sugar, black pepper, hot chili sauce, and vinegar. Stir cook for 3-5 minutes on medium heat.
* Next, add the cooked spaghetti and ¼ cup of the reserved water. Toss well for 1-2 minutes and turn off the stove.
* Finally, serve the Simple Collard Green Spaghetti garnished with parmesan and crisp crumbled bacon bits.
