Tuna Wraps with Homemade Flatbread

   **Flour Tortillas Ingredients**

   * 1 1/2 cups all purpose flour
   * 1/2 cup hot water
   * 1 tsp baking powder
   * 1 tbsp vegetable shortening
   * 1 tsp salt

   **Directions**

   1. Combine flour, baking powder and salt in a bowl.
   2. Add vegetable shortening and hot water then combine until a dough is formed.
   3. Transfer dough on to a floured surface then knead until it becomes a smooth dough.
   4. Allow to rest for 20 minutes before shaping into golf sized dough balls.
   5. Place dough balls on a floured surface then roll them out until approximately 8-10 inches in diameter.
   6. Place into a hot frying pan, cook on one side until bubbles start to form (approximately 45 seconds).
   7. Carefully flip the wrap and allow to cook for approximately 45 seconds.
   8. Place finished wraps in a cloth or in foil and allow to steam.

   **Tuna Salad Ingredients**

   * 2 tins tuna chunks *(drained)*
   * 1/2 cup black olives *(chopped)*
   * 1 bundle celery *(finely chopped)*
   * 1 purple onion *(finely chopped)*
   * 2 cloves garlic *(finely chopped)*
   * 2 cups grated carrot
   * 1 cucumber *(diced)*
   * 1 bundle watercress
   * 1/4 cup lemon juice
   * 3 tbsp mayonnaise
   * salt & black pepper *(to taste)*

   **Directions**

   1. Combine all ingredients (*with the exception of the watercress)* in a bowl.
   2. Fill wraps with tuna salad then top with watercress.
   3. Wrap tightly then stick with toothpicks and cut in half to serve.
   4. Enjoy!
